POHA UTTAPAM

INGREDIENTS :
FOR BATTER:
1. ½ cup poha / beaten rice, thick
2. ½ cup rava / semolina / suji, fine
3. ½ cup water
4. ½ cup curd / yogurt
5. ½ tsp salt
FOR TOPPINGS:
1. ½ onion, finely chopped
2. 2 green chillies,finely chopped
3. ½ carrot, finely chopped
4. ½ capsicum, finely chopped
5. 2 tbsp coriander, finely chopped
6. ¼ tsp salt
7. Oil for roasting
Notes:
1. Firstly, add vegetables of your choice to make pancake nutritious.
2. Also, you can mix the vegetables with batter instead of topping.
3. Additionally, make sure to soak poha and rava well as it absorbs water.
4. You can sprinkle chilli flakes on toppings for more spice
5. Finally, poha uttapam recipe tastes great when served hot.
INSTRUCTIONS :
1. Firstly, in a large bowl soak poha in enough water for 5 minutes.
2. Drain off the water and blend to smooth paste.
3. Transfer the poha paste to a large bowl.
4. Add rava, water,curd and salt.
5. Mix well making sure everything is well combined.
6. Rest for 20 minutes making sure the rava is soaked well.
7. Prepare the toppings by taking onion, carrot, capsicum, coriander and salt.
8. Mix well making sure everything is well combined.
9. Now pour the poha batter into small uttapam.
10. Top with a tbsp of prepared toppings and press gently.
11. Pour oil around the uttapam.
12. Cover and cook for a minute or until the base is cooked well.
13. Flip over and cook both sides.
14. Finally, enjoy poha uttapam with tomato sauce or coconut chutney.

Instant Oats Rava Dosa

INGREDIENTS
1 cup instant oats:
1. ½ cup rice flour
2. ¼ cup rava / semolina / suji
3. 1 tsp salt
4. 2½ cup water
5. 1 tsp cumin / jeera
6. 1 inch ginger, chopped
7. 1 chilli, finely chopped
8. ½ onion, finely chopped
9. 2 tbsp coriander, finely chopped
10. oil, for roasting
Notes:
1. Add tbsp of curd to get the tangy flavour in dosa.
2. Additionally, you can add dry coconut pieces and cashew pieces into batter.
3. Finally, oats dosa recipe tastes great when served hot and crispy.
INSTRUCTIONS
1. Firstly blend the instant oats
2. Transfer the powdered oats into a large bowl.
3. Also add rice flour and rava.
4. Further add salt and water.
5. Whisk and mix well making sure there are no lumps
6. Further add ginger, chilli, onion, coriander and few curry leaves.7.mix well and rest the batter for 20 minutes making sure the rava has absorbed water.
8. Mix well making sure the batter is thin watery consistency.
9. Spread teaspoon of oil uniformly
10. Now carefully pour the dosa batter over very hot tawa.Do not fill the holes, as the texture of rava dosa will spoil.
11. Lower the flame and cook until the dosa turns golden and crisp.
12. Finally, fold the dosa and serve oats dosa immediately with tomato chutney or coconut chutney.
