Ingredients:
1. Boneless Chicken – 500 gms
2. Curd – 2 tbsp
3. Malai – 1/4 cup
4. Ginger Garlic paste -2 tsp
5. Salt -1 tsp
6. Onions, fine chopped- 1 big (100 grams)
7. Tomatoes, chopped- 4 small (200 gms)
8. Green Chillies – 2
9. Ginger julienned- 1 tbsp
10. Coriander chopped for garnish- 2 tbsp
11. Cumin seeds- 3/4 tsp
12. Turmeric Powder-1/4 tsp
13. Red Chilli powder-1 tsp
14. Coriander powder-1 tsp
15 Kasuri methi – 1 tsp
16. Water – 1/4 cup
Chicken handi recipe instructions with step by step photo:
1. Firstly heat oil in a flat pan and add the ginger garlic paste.
2. Fry on low heat for 1 minute and add the chicken cubes along with 1 tsp salt. Mix and cook on high to medium heat for 3-4 mins. Take it out and set aside.
3. Heat 2 tbsp oil in the same pan and add the chopped onions. Fry on medium heat till onions are translucent
4. Add the chopped tomatoes and cookon medium heat for 3-4 mins till soft.
5 .Now add the Turmeric, Red Chilli and Coriander powders, mix and add a chiken stock
6. Continue to cook for around 3 minutes on medium to low heat till oil separates.
7. Add the fried chicken and fry on medium heat for 5 mins till water dries up
8. Now add the black pepper, garam masala powder and roasted Kasuri Methi. Mixwell and cook for oil separates
9. Now turn of the flame and pour the curd and mix well
10. Turn on the stove on medium flame and stir well for a minute
11. Now add the green chilli pieces and ginger juliennes,
12. Give a mix and then add the fresh cream. You can add water if required.
13. Give a mix and simmer for 2-3 mins till oil separates.
14. Garnish with chopped coriander And serve hot with rice or rotis
