Ingredients:

1. eggplant – 1 large

2. breadcrumbs – 3/4 cup

3.sesame seeds – 1/3 cup

4. eggs – 2 medium sized

5.salt – 1 teaspoon or to taste

6. Pepper – 3/4 teaspoon

7.oil for frying

How to make crispy egg plant fry recipe instructions with step by step photo :

1. Slice eggplant into 1 cm (0.4-inch) slices. 

2. Place them in a bowl and sprinkle them with salt and water, allow them sit for 30 minutes to render some of their liquid and bitterness.

3. After 30 minutes wash eggplant slices from salt
and pat dry with a kitchen towel.
4. In a large bowl/plate place breadcrumbs and Sesame seeds.

 5. In another bowl beat 2 eggs with salt and pepper .

6. Heal oil in pan over high heat.

7. Dip eggplant slices in egg, then in crumbs.

 8.Next place in hot oil. 

9. Fry for 2 to 3 minutes on each side or until golden brown.

10. Drain on paper towel.
