Ingredients:
Dry Ingredients:
1. All purpose flour/Maida – 1.5 Cups
2. Baking powder – 1 teaspoon
3. Baking soda – 1/2 teaspoon
4. Salt – a pinch
5.Nutmeg powder (optional) – a pinch
Wet Ingredients:
1. Mango puree – 1 Cup
2. Sugar – 1/2 cup or to taste
3. Oil / melted butter – 1/3 cup
4. Yogurt – 2 tablespoon
5. Milk – 3 tablespoon
Mango Mousse Icing:
1. Whipped cream – 1/2 Cup
2.Sugar / honey – 3 tablespoon
3. Mango puree – 1/4 cup
Eggless Mango Muffins / Mango Cupcakes
without egg/oven Recipe instructions with step by step instructions:
1. Preheat the oven at 180 degrees Celsius/357 Fahrenheit’s Or preheat to add 2 inches of salt/sand in pressure cooker and close with lid for 10 minutes in medium heat.
2. Firstly, in a mixer jar, add 2 cups of chopped mangoes and blend to a smooth puree,it gives approx 1&1/4 cup of puree.
3. Now, in a large bowl add the 1 cup of prepared mango puree and sugar.
4. Blend well using a blender/Whisker until the sugar blends completely.
5. Then add the oil and yogurt and again blend well until the mixture is smooth.
6. Now sieve the dry ingredients ,all purpose flour,salt,nutmeg,baking soda,baking powder.
7. Make sure to mix well before sieve the Ingredients and sieve.
8. Fold well using a spatula or a hand blender.
9. Add the milk and blend well until it becomes smooth do not over beat.
10. The batter for muffins is ready.
To make muffins on Stove/without oven:
1. Firstly , grease the muffin tins using oil/non stick spray
2. Place them on idly plate or you can use muffin tin size bowls for perfect shape.
3. Pour the mixture into the muffin cups.
4. Once done,tap twice and place them on pre heated pressure cooker
5. Bake for 10 minutes on medium flame.
To make muffins on oven:
1. Place the muffins cups on muffins try
2. Pour the mixture into the muffins cups
3. Once done,tap twice and put them on pre heated oven and bake at 180° for 10-15 Minutes or testing skewer comes out clean
4. Once done, let them cool down to room temperature before frosting.
Mango Mouse frosting/icing preparation:
1. Firstly, in a bowl add whipping cream and beat till slightly thicken
2. Now add sugar , prepared mango puree
3. Beat well till Stiff peaks form.
4. Now pour the mango mousse icing into a piping bag and make your desired design on the muffins.
5. I am using 12 no nozzle to create a design.
6. Smooth & tasty muffins are ready now,enjoy!!
